*Homemade smoked salmon serve in a brandy snap tube & accompanied with a potato pancake

*Wild Boar , Duck liver & Cepes pate , served with a coing cream custard &  fig jam.

*Thinly slices of beef re-visited like a steak tartar & it’s garnishes

*Darne of Cod cooked slowly unilateral, cavier of aubergines, corriander butter & young vegetables from Jannier.

*Seabass cooked on a plancher, griolle mushrooms & mini seasonal vegetables, basil flavoured fish broth sauce.

*Lamb cooked slowly for 7 hours re-visisted by the chef, served with mogette beans & chip of smoked bacon.

*Baby Suckling Pig lightly smoked & marinated with lemeon thyme, accompanied with a Granny Smith espelet Sorbet & a “Noirmoutier” potatoe thyme – rosemary flavoured flan.
