*Breast of pigeon from “Michel Terrien’s farm lightly smoked by our chef and cooked in hay, accompanied with medley of seasonal miniature vegetables &, a flan of root celery & honey from “Bernard Blon”

* Filet of Veal seasoned with rosemary  then cooked slowly at a very low temperature before being lightly .pan fried to finish. Puree of Jerusalem Artichokes & young seasonal vegetables

*Sweet-bread  pan-fried, served with a creamy risotto & a flan of green fever beans
